Coconut Almond Macaroons

Ingredients

  • 1/2 cup egg whites, at room temperature
  • 1 tsp. pure vanilla extract
  • 7 oz (198 grams) almond paste
  • 2 cups icing sugar
  • 14 oz. sweetened flaked coconut

Preparation

Step 1

Preheat oven to 325 degrees.

Beat egg whites and extract until firm, but not dry.

In another bown combine almond paste, sugar, and coconut until the texture of small crumbs. Gently fold mixture together. Drop by tablespoons and bake for 18 minutes, or until lightly browned on bottom and firm to the touch. Cool cookie on wire racks.
