Meat Loaf

Ingredients

  • 1 tbsp. vegetable oil
  • 1 onion, chopped fine
  • 2 garlic cloves, minced
  • 1/2 tsp. dried thyme
  • 1/2 cup ketchup
  • 1/4 cup packed, light brown sugar
  • 4 tsp. cider vinegar
  • 2 large eggs
  • 1/2 cup milk
  • 2 tsp. dijon mustard
  • 2 tsp. worcestershire
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. tabasco
  • 2 lbs. meatloaf mix (beef, pork, veal)
  • 2/3 cup crushed saltines or 1 1/3 cup bread crumbs
  • 1/3 cup minced fresh parsley

Preparation

Step 1

Heat oven to 350 degrees. Cook onion in oil 5 minutes. Stir in garlic. Cook 15 seconds. Meanwhile mix ketchup, brown sugar and vinegar. In separate bowl mix eggs, milk, mustard, worcestershire, salt and pepper, and tabasco. Mix all together. Make a 9" x 5" loaf. Brush with half ketchup mixture. Bake 45 minutes. Brush again. Bake 15 minutes more.
