Brine for meats

Ingredients

  • 10 cloves garlic
  • 3 qts water
  • 1/2 cup kosher salt
  • 1/4 black peppercorns, plus
  • 2 tsp black peppercorns
  • 1/4 cup sugar plus
  • 2 tsp sugar
  • 1 1/2 tsp. dried Thyme
  • 1 tsp. Whole Alspice
  • 1 Bay Leaf

Preparation

Step 1

1. Bring all ingredient to a boil, reduce heat and simmer for 15 mins.
2. Allow to cool completely before using.
3. Large heavy duty sealable cooking bag works best. 8-24 hours in brine
