Gazspacho

Ingredients

  • 2 large ripe tomatoes, quartered
  • 2 large can of diced tomatoes
  • 1 Cucumber, peeled and cut in half, seeded
  • 1/2 Red bell pepper, cut in half, seeded
  • 1/2 Green bell pepper, cut in half, seeded
  • 1 Jalapeno, cut in half, seeded
  • 1/4 bunch of cilantro
  • 1 garlic clove, crushed
  • Fresh lime juice (1/2 lime)
  • Salt and pepper to taste
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil

Preparation

Step 1

Place in Blender to puree and pour in large container. Chill for 2 hours. Stir well and served chilled. Garnish with lobster or shrimp and diced bell pepper and cucumber tossed in a little red win vinegar and olive oil (3 part olive oil and 1 part vinegar).
