Squash or Egglplant Casserole

Ingredients
- 1 med. eggplant or squash
- 3 T. oil
- 2 T. chopped onion (or more)
- 2 T. chopped peppers
- 1/4 cup mushrooms
- 2 cup stewed or fresh tomatoes
- 1 cup water (use less with more tomatoes)
- 1/2 t. salt
- Dash pepper
- Few drops of tobasco sauce
- 1/2 t. basil
- 2 or 4 T. sugar

Step 1
Cut squash or eggplant to cover bottom of dish. Cook for 10 minutes
Cook onion, pepper, and mushrooms in oil for 5 minutes. Add rest of ingredients and simmer for 30 minutes. If it is not thick, thicken with corn starch.
Bake at 350 for 30 minutes then take out and layer with cheese. Place back in over long enough for cheese to melt.
