Fettuccine with Toasted Pine Nuts

Ingredients

  • 3/4 pound fettucine
  • 6 tablespoons butter
  • 1/3 cup pine nuts
  • 3 tablespoons chopped scallions, including green tops
  • 3 tablespoons chopped fresh flat-leaf parsley
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon fresh-ground black pepper

Preparation

Step 1

1. In a large pot of boiling, salted water, cook the fettuccine until just done, about 12 minutes.

2. Meanwhile, melt the butter in a medium frying pan over moderate heat. add the pine nuts and cook, stirring occasionally, until lightly browned, about 5 minutes.

3. Add scallions, parsley, salt and pepper and cook 1 minute longer.

4. Drain the fettuccine. Toss it with the pine-nut mixture.
