Oriental Vegetable Salad

Ingredients

  • 1 (20 oz) unsweetened pineapple chunks, undrained
  • 2 T. white wine vinegar
  • 2 T. low-sodium soy sauce
  • 1 t. sesame oil
  • 1/2 t. peeled, minced gingerroot
  • 1/8 t. crushed red papper
  • 1/2 lb fresh snow peas, trimmed
  • 1 1/4 C. diagonally sliced carrots
  • 1 bunch watercrest, trimmed
  • 2 medium red bell peppers, cut into 1/2 in. strips
  • 1 1/2 t. sesame seeds, toasted

Preparation

Step 1

Drain pineapple, reserving 1/4 cup juice; set pineapple aside. Combine reserved juice, vinegar, and next 4 ingredients in a small bowl; stir well. Cover and chill.

Place snow peas in a vegetable steamer over boiling water. Cover and steam 1 minute or until crisp tender. Rinse with cold water; drain and set aside.

Place carrots in steamer and steam 3 minutes. Rinse with cold water; drain and set aside.

Line a large serving platter with watercrest. Arrange pineapple, snow peas, carrots and bell peppers attractively over watercrest. Cover and chill.

To serve, pour dressing over salad; sprinkle with sesame seeds.
