  • 1

    pkg. cherry tomatoes, chopped

  • 7-8

    basil leaves, chopped

  • ¼

    tsp. crushed red pepper flakes

  • ¼-½

    cup of olive oil

  • 1

    16 oz. pkg. of rotelle or pinwheels

  • ricotta salada (optional) or another cheese if prefer


"Marinated Tomatoes:" 1. In bowl, combine chopped basil, crushed red pepper, olive oil, and chopped cherry tomatoes. 2. Squeeze tomatoes with hands and mix it all up. 3. Let mixture stand at room temperature for 15-20 minutes. "Following Directions:" 1. Cook pasta according to directions. 2. Spoon pasta with some of the pasta water right into the bowl with the sauce. 3. Mix it all together and add a spoonful more of the pasta water. 4. Add more crushed red pepper and chopped basil, if prefer. 5. Sprinkle some little squares of "ricotta salada" if desire (or another type of cheese) and stir
