Fresh Sweet Corn

This is a recipe that I received from my Aunt Glori and it is the best recipe for freezing fresh Iowa sweet corn!

Ingredients

  • 24 medium size ears of corn (16 cups of fresh corn)
  • 2 1/2 cups water
  • 1 stick margarine
  • 1/4 cup sugar
  • 1/2 tsp. salt

Preparation

Step 1

Cut the raw corn kernels off of the cob into a large bowl. In a Dutch oven pot, combine the corn kernels, water, sugar, salt, and butter. *Do NOT cover!!* Bring the mixture to a boil or until the bubbles rise just about the corn kernels. Remove the corn from the heat and allow the corn to cool. *The corn should cool enough to place your finger into the center of the pot and the corn will not burn your finger.* Place the corn in freezer bags and freeze until you are ready to use. To heat up the corn: Place the corn in a pot and bring to a boil. Serve warm.
