Vegetable Rice Casserole

Ingredients

  • 1/4 cup onion
  • 2 tsp olive oil
  • 1 (10 ounce) package broccoli, chopped, cooked
  • 1 (10 ounce) package cauliflower florets, cooked
  • 2 cups rice, cooked
  • 1 (10 3/4 ounce) can cream of celery soup, low fat
  • 1/2 cup milk, 1% or nonfat
  • 1 cup Cheddar cheese, lowfat, sharp, shredded
  • 2 tsp pepper
  • 1/4 tsp cayenne pepper
  • 2 tbsp Parmesan cheese, lowfat

Preparation

Step 1

Saute onion in olive oil. Combine all ingredients except Parmesan cheese and place in a casserole dish sprayed with nonstick coating. Sprinkle with Parmesan cheese, cover and bake at 350 F for 30 minutes.
