Ingredients

  • zucchini 1 3/4 cups grated, squeeze out extra water
  • flour 3/4 cup
  • eggs 2
  • parmesan cheese 1/2 cup or grated romano
  • salt 1/2 teaspoon
  • parsley 1 tablespoon chopped
  • oil for frying

Preparation

Step 1

Heat oil in pot
Mix together remaining ingredients
Drop a teaspoonfuls into hot oil
Cook until golden brown, turn fritters over to brown on other side
Remove from oil, place on paper towels

Can add any or all:
Bacon bits
Onion
Banana peppers
Tomatoes
Bell pepper
Hot peppers
