Ingredients
- ● 1 cup finely chopped red apple
- ● 8 oz. unsweetened crushed pineapple, drained
- ● 1/4 cup pecans, finely chopped, toasted
- ● 1/4 cup reduced-fat sour cream
- ● 1/8 tsp salt
- ● 3 medium cucumbers
Preparation
Step 1
1. In small bowl, combine apple, pineapple, pecans, sour cream, and salt.
2. Cover and refrigerate til chilled
3. To score cucumbers, cut lengthwise strips through peel. Cut each cucumber into 16 slices.
4. Blot with paper towels to remove moisture.
5. Spoon 1 tsp apple mixture onto each slice.
