Featherdown Farmhouse Beef Stew

We made this in a stew pot over a camp fire at Featherdown Farm and it was delicious but it's not too bad in a slow cooker either.

Ingredients
- 600 g diced lean casserole beef
- 3-4 slices bacon, diced
- 1 large yellow onion, diced
- 2-3 large carrots, diced
- 300 ml beef stock (if using Beef Bovril, use large tbsp. plus water)
- 2-3 large potatoes, diced small
- Sprinkling thyme, fresh if available
- Salt and pepper

Preparation
Step 1
Add all ingredients except potatoes to slow cooker and cook on low for 8-10 hours. Add potatoes with 2-3 hours remaining.
(If using stew pot over camp fire, brown beef, adding a little stock to ensure meat doesn't stick. Season. Add other ingredients except potato, with enough liquid to cover stew. Simmer approximately 2.5 hours. Add potatoes for final 45 minutes of cooking.)
