Corn Fritter Patties

Ingredients

  • 1 cup pancake mix
  • 1 egg, lightly beaten
  • 1/4 cup plus 2 tablespoons milk
  • 1 can (7 ounces) while kernel corn, drained
  • 2 cups vegetable oil

Preparation

Step 1

In a small bowl, combine the pancake mix, egg and milk just until moistened. Stir in the corn.

In an electric skillet or deep-fat fryer, heat 1/4 inch of oil to 375ºF. Drop batter on 1/4 cupfuls into oil; press lightly to flatten. Cook for 2 minutes on each side or until golden brown.
