Chicken & Ginger Salad

Ingredients

  • 1/2 pound macaroni or twists pasta shapes
  • 4 half chicken breasts poached/steamed for 10 minutes
  • 2 stalks celery, sliced
  • 6 green onions, sliced
  • 1/2 red pepper, seeded and diced
  • 3 tablespoons crystallized ginger diced
  • 1/2 cup mayonnaise
  • salt & pepper to taste
  • lettuce
  • 1 mango or fresh pineapple

Preparation

Step 1

Cook pasta in boiling, salted water. Drain & rinse.
Cut chicken into large chunks. No skin! No bones!

Combine pasta, chicken, vegetables and ginger. Stir in mayonnaise & season with salt & pepper.

Pile into lettuce cups and serve. Add mango or pineapple slices and arrange on plates.
