Toasted Fresh Bread Crumbs

Homemade bread crumbs are lighter and ahve more volume than commercially prepared dried crumbs.

Ingredients

  • 6 ouncdes day-old bread, crust removed
  • 2 tbl Extra Virgin olive oil
  • Coarse salt and freshly ground black pepper

Preparation

Step 1

Preheat oven to 375 F

Crumble the bread into a bowl with yoru fingers, making small, uneven crumbs. Moisten with the olive oil and season with salt and pepepr.

Turn the crumbs out into a baking sheet and toast in the oven, tossing occasionally for 8 to 10 minutes, until golden and crunchy. Let cool. The crumbs can be stored in an airtight container at room temperature for up to 5 days.
