Ingredients

  • Olive oil
  • 1 med chopped onion
  • 4 cloves minced garlic
  • 1/8 t cayenne
  • 1/8 t black pepper
  • 1 t cumin
  • ¾ t coriander
  • 1 t basil
  • ¼ t oregano
  • 1 can black beans
  • 1 can diced tomatoes oregano and basil
  • Polenta or cornbread or rice

Preparation

Step 1

Heat oil add everything except beans and tomatoes. Sauté until onions are tender (about 5 minutes)
Add beans and tomatoes heat until bubbly.
Serve over cornbread.
