Ingredients

  • 2 pkgs bulk pork sausage
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 2 loaves day old bread, cubed
  • 2 large potatoes, boiled
  • 2 eggs
  • butter
  • poultry seasoning
  • fresh sage
  • salt
  • pepper

Preparation

Step 1

Sautee onion & celery, set aside. Brown sausage meat, set aside. Brown bread in frying pan with melted butter, add to above ingredients. Add eggs and a bit of potato, season to taste. Form into 2 loaf pans like a meatloaf. Bake at 375F for an hour until crust is brown and firm, cool and wrap. Make day ahead of serving.
