Scampi Con Due Pane

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 shallot, minced finely
  • 1 leek (white part only), minced finely
  • 4 garlic cloves, minced finely
  • 1 pinch red pepper flakes
  • 1/2 cup white wine
  • 12 shrimp, peeled and deveined
  • Chopped fresh parsley
  • 1 lemon half
  • Salt, to taste
  • White pepper, to taste
  • 2 tablespoons butter
  • 1 orange bell pepper, chopped

Heat oil in a pan over medium-high. Saute shallots and leeks. (Do not brown. Turn down heat, if necessary.) Add the garlic and saute. (Again, do not let it start to brown.) Add red pepper flakes and cook for approximately 1 minute. Add wine and let sauce reduce for 1-2 minutes. Add shrimp and cook on each side for 2-3 minutes. Mix in a large pinch of parsley. Squeeze in juice from the lemon half. Add salt, white pepper and butter. Once butter has melted, mix well. Serve immediately, garnished with remaining parsley, chopped bell pepper and one slice of each bread.
