Ingredients
- 9oz Penne Pasta, uncooked
- Cooking Spray
- 1 lb boneless, skinless Chicken Breasts, cut into 1" strips
- 1 Tbl Olive Oil
- 2 C Broccoli florets
- 2 medium Red Bell Peppers, sliced into thin strips
- 2 medium Yellow Squash, sliced
- 1 14oz can No-Salt added Diced Tomatoes, drained
- 1/4 C White Wine
- 1/2 tsp Dried Basil
- 1/2 tsp Dried Oregano
- 1/4 tsp Salt
- 1/4 tsp Ground Black Pepper
- 1/4 C Parmesan Cheese, grated
Preparation
Step 1
1. Cook pasta according to package directions, omitting salt.
2. Coat a large nonstick skillet with cooking spray. Over medium-high heat, cook chicken strips for approximately 3-5 minutes or until done. Remove from pan and set aside.
3. Add olive oil to pan. Saute broccoli, red peppers and squash, 3-4 minutes. Add tomatoes, wine, herbs, salt and pepper. Cook for 5-7 more minutes.
4. Toss chicken and vegetables mixture with drained, cooked penne pasta. Sprinkle with parmesan cheese.
