I think I may have co-opted some of this recipe from Betty Crocker's cookbook.

Ingredients

  • 1 32 oz. container of beef broth (or vegetable)
  • 1 32 oz. container of chicken broth (or vegetable)
  • 1 medium onion, chopped
  • 8 celery stalks, sliced
  • 5 medium carrots, peeled & sliced
  • 2 elephant cloves of garlic, sliced (or double if regular)
  • 4 small-medium zucchini, chopped
  • 1 28 oz. can diced tomatoes
  • 1 15 oz. can Northern beans, rinsed & drained
  • 1 15 oz. can light red kidney beans, rinsed & drained
  • (**can switch out the beans to different ones if prefer**)
  • 1/2 (or more) 12 oz. bag of frozen green peas
  • 1/2 bag of 16 oz. frozen okra
  • 1 12 oz. bag of small shells ("shell-roni")
  • 1 1/2 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. cumin
  • 1/2 tsp. black pepper
  • 8 dashes of Worchestershire sauce

Preparation

Step 1

1. Put broth, all the vegetables except the zucchini and frozen ones, the beans, pasta, Worchestershire sauce and spices into dutch oven on medium-high heat.
2. Bring to a boil and simmer for 15 minutes.
3. Then add the rest of the ingredients and bring back to a boil and simmer for 10 to 15 more minutes.
