Ingredients
- 1 cup of brown rice
- 1 15 oz. can of black beans, drained
- 1 red or green medium pepper, chopped
- 1/2 medium onion, chopped
- 4 scallions, sliced
- 2 elephant cloves of garlic, sliced (double if regular size)
- 1 tsp. dry cilantro
- 4 TBSP pico de gallo (or another type of salsa if prefer)
- some ground black pepper to taste

Preparation
Step 1
1. Cook rice according to directions.
2. Heat pan to medium-high with some olive oil--set timer for 10 minutes; then add onion and stir.
3. After about 2 minutes, add scallions and stir for 30 seconds; next add the garlic, stirring occassionally.
4. Add cilantro and keep stirring often.
5. When there is 4 minutes left on the timer add the pepper pieces.
6. After 3 minutes add the cooked rice and the pico de gallo and stir well.
7. Add a bit of ground pepper to taste and stir occassionally until the timer goes off--then serve.
