boneless chicken breasts, cut into bite-size pieces
c marsala wine
can chicken broth
pkg. mozzarella cheese, shredded
bread crumbs (with grated parmesan cheese added)
Preheat oven to 350. Dip chicken pieces in eggs followed by bread crumbs. Brown chicken in skillet. Place in baking dish, alternating chicken and sliced mushrooms. Pour chicken broth and marsala wine over. Cover with mozzarella cheese. Bake at 350 for 40 minutes with foil on dish. Remove foil and cook for additional 10-15 minutes. Serve over rice.
