MVCC Clam Chowder

Ingredients

  • 1/2# 1# Butter
  • 5 oz 10 oz Onion diced
  • 5 oz 10 oz Celery diced
  • 4 oz 8 oz Carrots diced
  • 3 large 3 large Potatoes - small dice
  • 1-1/2 TBSP 3 TBSP Clam Base
  • (I use a bottle for 1/2 and 2 bottles of clam juice
  • if I don't have Clam base)
  • 1 tsp 2 tsp Chicken base or cubes
  • salt, white pepper to taste
  • 1 qt (32 oz) 2 qt (64 oz) Chopped clams &
  • juice or I use 3 cans or 6 cans of chopped clams)
  • 1 qt (32 oz) 2 qt (64 oz) Heavy Cream
  • 1/4 Cup 1/2 Cup Flour

Preparation

Step 1


Saute onion, celery, carrot in butter until weeping. Add flour. Add clams, bases, and juice. Add potatoes and simmer. Before serving, add cream and simmer.
