Ingredients
- 1 tablespoon olive oil
- 1 medium red pepper, diced
- 1 small yellow onion, diced
- 1/2 cup bread crumbs
- 1/4 cup chopped fresh flat leaf parsley or 2 tablespoons dry
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 large eggs, lightly beaten
- 2 tablespoons rice milk (alternatively use almond or soy milk)
- 1/2 pound of 99% fat free turkey
- 1/2 pound of 93% - 97% fat free turkey
- 8 slices of turkey bacon
Preparation
Step 1
Preheat oven to 375 degrees (350 degrees if using a convection oven). In a medium frying pan, heat olive oil over medium heat. Add the red peppr and onion and cook until the vegetables are softened, about 5 minutes. Set aside to cool.
Place the vegetables in a large mixing bowl. Add the remaining ingredients and mix thoroughly. Line a large baking sheet with parchment paper. Form the meat mixture into a loaf on the parchment paper. Place the strips of bacon over the loaf in a criss-cross pattern.
Bake for 45 to 50 minutes or until the internal temperature reaches 165 degrees. Remove from oven and allow the meatloaf to rest for 10 minutes before serving.
