Berry, Goat Cheese & Pistachio Salad

Ingredients
- 3/4 cup frozen raspberries, thawed
- 1/4 cup red wine vinegar
- 1 1/2 tsp honey
- 1 1/2 tsp sugar
- 1/2 cup olive oil4 1/2 oz baby greens
- 1 1/2 cup crumbled goat cheese- 8 oz
- 3/4 cup coarsely chopped toasted pistachios
- 2 cups mixed fresh berries (strawberries, blueberries, rasperries)

Preparation
Step 1
Puree thawed raspberries in blender until smooth, strain, whisk with vinegar, honey & sugar. Gradually whisk in oil, season to taste with salt and pepper. Toss with greens & 1/2 cup dressing, top with rest, serve with remaining dressing.
