Ingredients

  • 3/4 cup frozen raspberries, thawed
  • 1/4 cup red wine vinegar
  • 1 1/2 tsp honey
  • 1 1/2 tsp sugar
  • 1/2 cup olive oil4 1/2 oz baby greens
  • 1 1/2 cup crumbled goat cheese- 8 oz
  • 3/4 cup coarsely chopped toasted pistachios
  • 2 cups mixed fresh berries (strawberries, blueberries, rasperries)

Preparation

Step 1

Puree thawed raspberries in blender until smooth, strain, whisk with vinegar, honey & sugar. Gradually whisk in oil, season to taste with salt and pepper. Toss with greens & 1/2 cup dressing, top with rest, serve with remaining dressing.
