Ingredients

  • ¾

    cup frozen raspberries, thawed

  • ¼

    cup red wine vinegar

  • tsp honey

  • tsp sugar

  • ½

    cup olive oil4½ oz baby greens

  • cup crumbled goat cheese- 8 oz

  • ¾

    cup coarsely chopped toasted pistachios

  • 2

    cups mixed fresh berries (strawberries, blueberries, rasperries)

Directions

Puree thawed raspberries in blender until smooth, strain, whisk with vinegar, honey & sugar. Gradually whisk in oil, season to taste with salt and pepper. Toss with greens & 1/2 cup dressing, top with rest, serve with remaining dressing.
