- 1/3 cup dried apricots
- 2/3 cup sugar, divided
- 1/2 cup butter
- 1 egg, separated
- 1/2 teasp. vanilla
- 1 cup all purpose flour
- 1/2 teasp. salt
- crushed nuts (walnuts)

Step 1
Rinse 1/3 cup dried apricots, cover with water and cook until very tender. Put through sieve and add 1/3 cup sugar. Cook slowly stirring occasionally until very thick. Cool. [Alternatively, use Solo Apricot Filling]. Cream 1/2 cup soft butter with 1/3 cup sugar thoroughly. Stir in 1 egg yolk and 1/2 teaspoon vanilla. Sift 1 cup flour with 1/2 teaspoon salt into creamed mixture. (Chill this a few minutes*) Shape into 2 dozen small balls. dip into 1 unbeaten egg white. Roll in crushed nuts. Place about 2 inches apart on lightly buttered baking sheet. Make a deep dent in center of each ball. Bake 300 degrees for 35 minutes. Remove from pan to rack and fill centers while still warm with apricot mixture.
