Springtime Strawberry Salad

Ingredients

  • 1 lb. fresh asparagus, trimmed and cut into one inch pieces
  • 1 T. olive oil
  • 1 pkg. fresh spinach
  • 2 cups fresh strawberries sliced
  • ½ cup toasted chopped walnuts
  • ⅓ cup vegetable oil
  • 3 T. raspberry vinegar
  • 1 tsp. sugar
  • ½ tsp. salt

Preparation

Step 1

Place asparagus in a foil lined pan and sprinkle with olive oil tossing to coat. Roast uncovered at 400 degrees for 15 minutes or until crisp tender, turning occasionally. Cool.

In a large bowl, combine spinach, strawberries, walnuts and asparagus. In a jar with a tight fitting lid, combine the vegetable oil, vinegar, sugar and salt. Shake well. Drizzle over the salad and toss to coat.
