Tomato Quiche

Ingredients

  • Pastry for 1 crust 9" pie
  • 1 Tbsp chopped green onion
  • 1 Tbsp butter
  • 1 cup coarsley chopped, peeled and seeded tomatoes (2 medium)
  • 1 cup shredded swiss cheese
  • 2 Tbsp grated parmeson cheese
  • 4 beaten eggs
  • 1 cup light cream
  • 1/4 tsp salt

Preparation

Step 1

Prepare pastry, line a 9" quiche dish or pie plate with pastry. Do not prick. Line pastry with foil. Bake 450 for 5 minutes. Carefully remove foil. Bake 5-7 min more or till golden. Remove from oven, reduce temp to 325 (shell should be hot when filling is added).

Meanwhile in skillet cook onion in melted butter. Remove from heat, stir in tomato and cheeses. Spoon mixture into pastry shell. Beat together cream, eggs, and salt. Pour over tomato mixture. Bake 325, 30-35 minutes or till almost set. Let stand at least 5 minutes before serving.
