Rhubarb Bar Cookies

  • 1 C flour
  • 1/2 C sugar
  • 1 t baking powder
  • 1/2 t salt
  • 1/2 C softened butter
  • 1 beaten egg
  • 1 T milk
  • 2 C peeled, finely diced rhubarb
  • 1 small pkg. (3 oz) strawberry jello
  • 1 C sugar
  • 1/2 C flour
  • 1/2 t cinnamon
  • 1/2 C softened butter



Step 1

Preheat oven to 350.
Mix flour, sugar, baking powder and salt. Cut in softened butter until crumbly. Whip up egg with milk. Add. Spray 9 x 9 pan with Pam. Spread mixture and pat down. Sprinkle rhubarb over top. Then jello should be sprinkled over.

Put cup of sugar, 1/2 cup of flour and cinnamon in bowl. Mix together and cut in softened butter. Should be crumbly. Scatter over top.

Bake for 45 minutes.
