Parmesan Pita Chips

Ingredients

  • 6 pita breads (about 6 inches in diameter)
  • 1/4 cup (1/2 stick) butter or margarine
  • 1/4 cup olive oil
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon dried savory or thyme leaves, crumbled
  • 1/3 cup grated Parmesan cheese

Preparation

Step 1

1. Preheat the oven to 425 degrees F. Using a sharp knife, cut each pita bread into quarters, cut through the middle and split each quarter into two, for a total of 48 pieces. Lay the pieces cut-side up on an ungreased baking sheet.
2. In a small saucepan, heat butter and oil over moderate heat. Add garlic and savory, saute for 15 seconds. Remove the butter mixture from the heat. Brush the mixture over the cut side of the pita pieces. Sprinkle grated cheese evenly over the pita pieces.
3. Bake the pita until the pieces are crisp and lightly browned, about 10 minutes. Transfer the chips to a rack to let them cool, and serve if not serving immediately, store the chips in an airtight container.
