Ingredients
- 4 large pork chops (thick, butterfly chops or pork tenderloin. Cut up into 1" slices).
- 1 tsp. sage
- salt and pepper
- 4 tbs. ketchup
- 4 large Spanish onions or sweet white onion (sliced)
- Worcestershire sauce dry mustard
- Paprika
- 5 ozs. Vermouth or dry white wine
Preparation
Step 1
Place chops in buttered, oven proof casserole dish.
Sprinkle each liberally with sage, salt and pepper. Spoon a generous tbs. of ketsup over each chop. Top with a slice of onion and tomato. Sprinkle Worcestershire sauce over each. Season with dry mustard and paprika. Pour Vermouth into dish at side to avoid washing off seasonings. Cover and place in 350 degree oven for 1 hour. Remove lid and bake for additional 1/2 hour or enough to just make them brown.
To serve, remove the chops from casserole to heated dinner plates. Serve with rice.
