Gingerbread People

- 1 cup (2 sticks) butter, softened
- 1 cup dark brown sugar
- 1 egg
- 1/2 cup molasses
- 2 tsp cinnamon
- 2 tsp ginger
- 1 tsp allspice
- 1 tsp baking soda
- 1/4 tsp salt

Preparation
Step 1
Beat butter and sugar with mixer until fluffy, 3-4 minutes.
Add egg, mix well. Beat in molasses, cinnamon, ginger, allspice, baking soda, and salt. Reduce speed, add flour, 1 cup at a time, mixing until incorporated. Divide dough into quarters, shape into disks, wrap each in plastic, chill 3 hours or up to 1 day.
Preheat oven to 375. Roll out disk of dough on floured surface to 1/8 inch thick. Cut out shapes using gingerbread people cutters and place on parchment lined baking sheets, 1 inch apart. Repeat with rest of dough, re-roll scraps and use again. Chill on cookie sheets 20 minutes.
Bake, rotating halfway, for 12-15 minutes. Let cool on sheet 5 minutes, then transfer to wire rack to cool completely.
Decorate with royal icing.
