Ingredients

  • 3/4 cup sifted flour
  • 3/4 cup sugar
  • 1/2 tsp baking powder
  • 1 (1-oz) square dark baking chocolate
  • 3 cups salted pecan halves
  • 1 pound pitted dates
  • 1 cup (8-oz) maraschino cherries, well drained
  • 3 eggs
  • 1-1/4 tsp vanilla extract
  • 1/4 tsp almond extract
  • 3/4 tsp orange extract

Preparation

Step 1

Preheat oven to 300 degrees
Prepare 9x5x2-3/4-inch loaf pan by greasing bottom only.
Sift together the flour, sugar, and baking powder. Grate dark baking chocolate. Mix with dry ingredients.
Place in a large bowl the pecan halves, dates, and maraschino cherries. Add dry ingredients to fruit mixture. Mix lightly until fruit and nuts are well coated.
Beat until thick the eggs, vanilla, almond and orange extracts.
Blend egg mixture into fruit mixture until well mixed.
Turn batter into prepared pan and spread to corners.
Bake 1 hour and 30 minutes, or until test done.
Remove from pan and finish cooling. Wrap in foiul. Refrigerate.
