Ginger Cookies from Ellen Stanley

Ingredients

  • 2/3 cup Crisco, melted
  • 1 cup sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups flour
  • 1/4 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger (or a little more....)
  • 1/4 cup sugar

Preparation

Step 1

Combine melted Crisco and 1 cup sugar in large bowl. Add egg (carefully so as not to cook it) and beat well. Stir in molasses. Combine flour, salt, soda, cinnamon, and ginger. Add to molasses mixture, stirring to mix. Roll dough into one-inch balls, dropping each ball into a bowl containing the 1/4 cup of sugar. Bake on a silpat covered cookie sheet at 350 for 9-12 minutes.
