Ingredients
- c fennel spice:
- 4 lbs pork leg or shoulder
- 1 c fennel seeds
- 3 TB coriander seeds
- 2 TB white peppercorns
- 3 TB kosher salt
Preparation
Step 1

Toast fennel seeds, coriander, peppercorns in heavy pan over med. heat, tossing. Do not burn. When lightly brown and fragrant, remove and cool on a plate. When totally cooled, blend with salt in blender until a fine powder, shaking occasionally. Store in glass jar in cool place or freeze.
Preheat to 275o. Coat meat thoroughly with spice rub and arrange in a rack in roasting pan. Roast until meat is very tender and pulls away easily with tongs: *6-8 hrs*
