Ingredients
- 3 C cooked basmati rice
- 1 1/2 c pineapple, drained
- 1 lg carrot shredded
- 1/2 c frozen peas, thawed
- 1/4 c minced green onions
- 1 sm red chili, seeded and minched
- 1/2 c chopped parsley
- 1/4 c chopped unsalted roasted peanuts
- 1/4 c rice vinegar
- 3 T say sauce
- 1 T sesame oil
- 2 t brown sugar
- salt

Preparation
Step 1
In a lg bowl. add rice, pineapple,carrot, peas, green onions,chili, parsley and peanuts. Set aside
In a bowl, add vinegar, soy, oil, sugar and salt. Stir
Pour over rice mix and toss. Chill
