Ingredients

  • 3 C cooked basmati rice
  • 1 1/2 c pineapple, drained
  • 1 lg carrot shredded
  • 1/2 c frozen peas, thawed
  • 1/4 c minced green onions
  • 1 sm red chili, seeded and minched
  • 1/2 c chopped parsley
  • 1/4 c chopped unsalted roasted peanuts
  • 1/4 c rice vinegar
  • 3 T say sauce
  • 1 T sesame oil
  • 2 t brown sugar
  • salt

Preparation

Step 1

In a lg bowl. add rice, pineapple,carrot, peas, green onions,chili, parsley and peanuts. Set aside

In a bowl, add vinegar, soy, oil, sugar and salt. Stir

Pour over rice mix and toss. Chill
