For the best prime rib purchase a week in advance and let age in the fridge, even a few days is better than none.

Preheat oven to 475 degrees.

Place roast on cutting board and puncture holes through out the roast. Cut the garlic cloves into thin slices and place into the puncture holes to allow the garlic to permeate throughout the meat while it cooks. Once you have enough garlic through out the roast to your liking, season the outside of the roast with salt and garlic pepper. Tie the ends of the roast with string so that the roast cooks evenly. Once seasoned place the roast in roasting pan on the lowest rack setting. Leave the roast in the oven at 475 degrees for 25 minutes just to sear the outside. After 25 minutes decrease the temperature to 200 degrees. Continue to cook the roast 30 per pound until desired doneness. Internal temperature of 130 degrees for medium rare.
