Baked Spinach

Ingredients
- 1/2 C chopped onion
- 1 clove garlic, minced
- 1 (8 oz) pkg reduced-fat cream cheese, softened
- 2 T flour
- 1/8 tsp each, salt, pepper & nutmet
- 3/4 C skim milk
- 1/2 C egg substitute or egg whites
- 2 (10 oz) pkgs frozen chopped spinach, thawed & squeezed dry
- 1/2 C shredded Swiss cheese

Preparation
Step 1
Heat oven to 325. Saute onion 3-4 minutes, add garlic and cook another minute until softened. Beat cream cheese on medium speed w/ electric mixer until smooth. Mix in onion mixture, flour, spices, by hand. Add milk & egg and mix until blended. Stir in spinach and mix until combined.
Pour mixture into 8-inch square baking pan coated w/ cooking spray. Bake 45 to 50 mintues or until a knife inserted in center comes out clean. Sprinkle w/ cheese and return to oven for 2 - 3 mintues until cheese melts.
