Ingredients
- 1 boneless whole pork loin roast (3 to 4 pounds)
- 1 can (14 oz.) sauerkraut, rinsed and drained
- 1-3/4 cups chopped carrots
- 1 large onion, finely chopped
- 1/2 c unsweetened apple juice
- 2 teaspoons dried parsley flakes
- 3 tart apples, peeled and quartered

Step 1
1 - Cut roast in half, place in slow cooker.
2 - Combine the sauerkraut, carrots, onion, apple juice, parsley. Spoon over roast. Cover and cook on low for four hours
3 - Add apples to slow cooker. Covr and cook 2 or 2-1/2 hrs longer.
3 - Remove and let roast stand 5 minutes before slicing. Serve with sauerkraut.
