Ingredients

  • 11/4c Flour

  • 11/4c Cornstarch

  • 61/2tsp Baking Powder

  • 1/4tsp Pepper

  • 1/2tsp Garlic Powder

  • 1/2tsp Mix Spice

  • 11/2c Cold Water

  • 1/2tsp Oil

  • 21/2c Coconut

  • 1lb Shrimp, oil for frying

Directions

Mix first 6 ingredients. Add water and oil till smooth. Place coconut in a bowl. Dip shrimp into the spice batter and then into coconut. Heat oil in fryer pan at 375°. Drop in shrimp fryer pan with oil for 3-4 minutes. Drain and serve.
