Ingredients

  • 1 pound dried small white beans, rinsed and soaked overnight
  • Water to cover
  • 1/3 cup molasses
  • 1/4 cup brown sugar, packed
  • 1 cup chopped onion
  • 1/4 pound salt pork, or diced bacon
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt, or to taste

Preparation

Step 1

1. Rinse the beans and prepare to soak overnight: Place in large bowl; cover with cool water to two inches above beans; cover and let stand eight hours or overnight; reserve water.

2. Simmer the beans in the reserved water until tender, approximately 1 to 2 hours. Drain and reserve 1 cup of the liquid.

3. In Crockpot, combine all ingredients (including the reserved water from beans, plus fresh water to cover) except salt.

3. Cover and cook on low 12 to 14 hours; stirring ocassionally if possible. To expedite the cooking time, increase crock pot to high for a couple of hours after 6-8 hours on low.

3. Add salt to taste when beans are tender.
