Beef Stuffed Zucchini

Ingredients
- 1 1/2 lb uncooked lean ground beef
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 1/4 cup soft bread crumbs
- 1 egg, beaten
- 1 tbsp dried parsely
- 1 tsp basil
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/8 tsp pepper
- 16 oz can tomato sauce, divided
- 1 medium tomatoes, chopped
- 5 medium zucchini
- 2 cups mozzarella cheese, shredded

Step 1
Preheat oven to 375 F.
In large bowl combine first 11 ingredients and 8 oz tomato sauce; mix well. Stir in tomatoes. Halve zucchini lengthwise; scoop out seeds. Fill with meat mixture; place in two 13 x 9" baking dishes. Spoon remaining tomato sauce over each. Bake uncovered for 45 minutes or until zucchini is tender. Sprinkle with cheese the last 4 minutes of baking.
