Mini potato skins stuffed with avacado salsa

Ingredients

  • POTATO SKINS
  • 10 small white potatoes
  • 2 T oil
  • 1/2 t salt 1/4 t pepper
  • AVACADO SALSA
  • 3 avacados peeled and diced
  • 2 T lime juice
  • 1/4 c pico de gallo
  • 1/2 t salt
  • 1/2 t ground cumin

Preparation

Step 1

Bake potatoes 400 degrees for about 30 mins. Till tender.....Cool to the touch. Cut in half and scoop out centers. Place potato skins back in oven cut side up, on a baking pan. Cook till edges are crisp about 20 mins

Meanwhile, make avacado salsa

Put avacado in bowl add lime juice, pico, salt, pepper and cumin.
