Chilli Con Queso (Nancy Walker)

Ingredients

  • ½ cup chopped onion
  • ½ cup chopped green pepper
  • ½ cup butter
  • 1 crushed garlic
  • ¼ cup cornstarch
  • 1-1 lb. can stewed tomatoes
  • 1 t. salt
  • ½ t. mixed Italian herbs
  • ¾ t. Tabasco
  • 1 lb. grated sharp cheddar cheese
  • 1 tall can pitted ripe olives

Preparation

Step 1

Sauté onion & pepper in butter until soft. Add garlic and cook a minute longer. Blend in cornstarch. Add tomatoes, slat, herbs, Tabasco. Cook, stirring until it boils and thickens. Ad cheese & stir over low heat until melted. Add ripe olives cut into chunks. Makes about 4 ½ cups.
