Chicken Biryani

Ingredients

  • Chicken
  • 3 pounds mixed boneless chicken breasts and thighs (or you preference)
  • 1/2 cup oil
  • 4 large onions
  • 4 TBS garlic and ginger paste
  • 4 tsp tomato paste, or 1 8 Oz can tomato sauce
  • 1 TBS coriander powder
  • 1 TBS cumin powder
  • 1 TBS turmeric powder
  • 1 TBS chili powder
  • salt to taste
  • 1 cup chopped cilantro
  • 1 cup yogurt
  • 2 TBS lemon juice
  • Rice
  • 4 cups basmati rice, half cooked with 1 TBS salt

Preparation

Step 1

Roast spices in skillet
add oil, saute onions
add garlic,ginger and tomato paste
add chicken and brown.
add remaining ingredients to make a chicken curry.

Half cook the rice per the ingredients.

Assemble the biryani in a large skillet or covered pan.

add 1/4 cup oil
8 bay leaves
2 cinnamon sticks
4 large cardamom posds
1 TBS whole cumin seeds

Let the whole spices cook in the oil until they start popping. Lower the heat to low. Layer rice and chicken curry, starting and ending with rice.
Cover and let cook on low until the rice is fully cooked. You may add cashews or raisins as an option.
