SQUARES - Walnut/Butter Tarts by Kathy Benson

Ingredients

  • 1/3 cup butter
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 1/2 - 2/3 currants, pecans, walnuts or coconut
  • 1/2 tsp vanilla
  • 1/4 tsp salt (optional)
  • 1 egg (2 if firmer filling wanted)

Preparation

Step 1

Melt butter. Mix all ingredients except egg. Let mixture cool then add slightly beaten egg. Bake at 350ºC for 10 minutes or 375ºC for 5 minutes or until golden brown.

Note: I usually double of triple this recipe and add 1/2 cup of each filling per recipe. i.e. 1½ cups currants. Enjoy!
