Ingredients
- Croutons:
- 1 Baguette, thinly sliced.
- 4 TBSP melted butter
- 1/2 C. grated Parmesean Cheese
- 2 TBSP thyme and rosemary, finely chopped.
- Mushrooms:
- 2 tsp EVOO
- 8 oz wild mushrooms (assortment)
- 2 cloves of garlic
- Rosemary and Thyme, chopped, to taste
- Splash of red wine
- Salt and Pepper to taste
- 4 OZ fontina cheese, grated.

Preparation
Step 1
Croutons:
1. Preheat broiler. Place slices of bread on baking sheet. Brush one side with the butter, top with cheese and dust with herbs. Place under broiler until cheese melts (2 - 3 minutes). Remove and place aside.
Mushrooms:
2. Heat oil in pan over high heat and add mushrooms, garlic and herbs. Saute until hot, add wine, and reduce until liquid thickens, about 5 - 7 minutes. Season with salt and pepper.
3. Either assemble croutons and mushrooms and sprinkle fontina on croutons and re-broil to melt, or add directly to mushroom mixture and serve aside croutons for self service.
