Ingredients

  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 3 large ripe bananas
  • 1 tsp vanilla
  • 1/2 cup (1 stick) butter, room temp
  • 3/4 cups sugar
  • 3 eggs
  • 1/2 c sour cream
  • 1/2 cup pecans, toasted and chopped (optional)

Preparation

Step 1

Preheat oven to 400. place 3 whole unpeeled bananas on a baking sheet and roast for 15 minutes. Peels will darken. Let cool.
Preheat oven to 350. Line muffin tins with paper liners. Whisk together flour, baking soda, baking powder, salt and cinnamon.
With a mixer, cream butter and sugar until pale and fluffy. Add eggs, one at a time, beating until incorporated. Add roasted bananas, mix to combine. Add flour mix in 2 batches, alternating with sour cream, beat until just combined. Add vanilla. If using, stir in pecans by hand.
Scoop batter into cups, filling 3/4 full. Bake 15-18 minutes.
